This is a great summertime recipe for a simple, fresh and healthy salad with grated beetroot, carrot and apple.

Although the sugars look high in this recipe, they are all natural sugars contained in the vegetables and fruit so are a good part of a healthy diet.

  • zest and juice of 1 orange or lemon
  • 1/2 teaspoon of ground black pepper

  4. Using the fine side of the grater, zest the orange or lemon and add to the bowl.
