  • 1 medium free-range egg
  • 1/2 teaspoon of vinegar or lemon juice
  • Pinch of salt


  • Medium saucepan
  • Slotted spoon
  • Small bowl
  • Wooden spoon


Step 1

Put the kettle on with enough water to half fill a medium-sized saucepan.

Step 2

Add the water to the pan with a pinch of salt and bring back to the boil.

Step 3

Once the water is boiling, add the vinegar or lemon juice.

Step 4

Break the egg into a cup.

Step 5

Stir the water vigorously, creating a whirlpool effect.

Step 6

Carefully slide the egg into the centre of the whirl.

Step 7

Turn down the heat until the water is only just gently bubbling away.

Step 8

Poach the egg for around 3 minutes until its just set.

Step 9

Using a slotted spoon, lift out and into a bowl lined with a piece of kitchen paper to soak up any excess water.

Step 10

Serve immediately however you like.
